Cake Decorating with Fondant is the topic of a new class in Ridgefield Continuing Education. Instructor Karen Rolfini-Beckenstein has enjoyed making whimsical and creative cakes for many years by using icing, cookies, candy, and fondant. This three-session class meets on Tuesdays, Oct. 14, 21 and 28, from 7 to 9 p.m. at Veterans Park School and costs $69.
